Ok,...... Now I'm cooking with gas!!

Just as promised, I present to you my "Crabby Cakes" RE-DONE!! I changed up the ingredients and got much better results.
I also promised a recipe, Here ya go!

BTW- These cakes got rave reviews from the young and old.

What you need............

  • 1lb lump crab meat
  • 1/2 onion, finely chopped
  • 2 stalks scallion, chopped
  • finely minced garlic
  • 1 tablespoon finely chopped red bell pepper
  • 1 egg
  • 2 tablespoons mayonnaise
  • 1 cup whole wheat bread crumbs
  • 1 1/2 teaspoons Creole seasoning
  • dash of sea salt
  • butter or olive oil
  • Tarter sauce
  • a few radishes & cilantro
  • 1 lime
Mixing it up....

Rinse and pick over crab meat to make sure there are no small pieces of shell in there. Do not break up the lump meat too much.
Heat olive oil in a large skillet over low heat. saute diced onion, red pepper, and garlic until tender.
Beat egg in bowl; add mayonnaise, creole seasoning, mix in sauteed vegetables bread crumbs, crab meat

Form into loose patties; place on plate. Refrigerate for about 1 hour.
Get out your heated skillet with oil, put the cakes in, fry them up for about 3 mins on each side or until they are cooked through and browned.

Serve with tartar sauce!
